Slow Cooker Butter Chicken

Browning the chicken and sautéing the aromatics before everything goes into the crock pot is key to building the flavors in our version of this popular curry.

  • 2 tablespoons extra-virgin olive oil
  • 2¼ pounds boneless, skinless chicken thighs, trimmed
  • 1 cup chopped yellow onion
  • 1 tablespoon grated garlic
  • 2 teaspoons grated fresh ginger
  • 2 teaspoons garam masala
  • 1½ teaspoons ground cardamom
  • 1 teaspoon chili powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon ground pepper
  • 1 (6-ounce) can no-salt-added tomato paste
  • ½ cup unsalted chicken broth
  • 1 (14-ounce) can light coconut milk
  • ¼ cup plus 6 teaspoons heavy cream
  • 1¾ cups water
  • 1 cup long-grain brown rice
