Scallion Pesto Scallop Pasta

Scallion Pesto Scallop Pasta with Swiss chard is one of those “special night” meals that looks like it should belong on a restaurant table but is easy to make at home!

Ingreadient

  • 4 tablespoons unsalted butter
  • 1 bunch of scallions thinly sliced, white and greens
  • 5 cloves garlic thinly sliced
  • 3/4 cup white wine
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon freshly cracked pepper
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup red onion sliced
  • 6 ounces fresh spinach
  • 7 pieces large swiss chard leaves stems and ribs removed, torn by hand
  • 1/4 cup chicken broth
  • 1 tablespoon corn starch
  • 1 tablespoon water
  • 2 tablespoons sour cream
  • 1/2 cup heavy cream
  • 2 tablespoons cream cheese softened at room temperature
  • 1/4 cup prosciutto chopped
  • 16 ounces orecchiette pasta cooked al dente
  • 20 large scallops dry packed
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup grated parmesan cheese
  • maldon sea salt
  • freshly ground pepper
