Scallion Pesto Scallop Pasta with Swiss chard is one of those “special night” meals that looks like it should belong on a restaurant table but is easy to make at home!

1 bunch of scallions thinly sliced, white and greens
5 cloves garlic thinly sliced
3/4 cup white wine
1/4 teaspoon fine sea salt
1/4 teaspoon freshly cracked pepper
2 tablespoons extra virgin olive oil
1/2 cup red onion sliced
6 ounces fresh spinach
7 pieces large swiss chard leaves stems and ribs removed, torn by hand
1/4 cup chicken broth
1 tablespoon corn starch
1 tablespoon water
2 tablespoons sour cream
1/2 cup heavy cream
2 tablespoons cream cheese softened at room temperature
