Minestrone Stew

A thicker take on Italian minestrone—packed with beans, pasta, veggies, and herbs in a tomato broth. Hearty enough to serve as a stew-style meal.

  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (11 ounce) can whole kernel corn, drained
  • 1 (4 ounce) can chopped green chilies
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder 1/2 teaspoon onion powder
