Curry Chicken Potpie

Here, the crust goes on the top instead of the bottom, inverting the classic chicken potpie recipe, so be sure to get the one that comes as a roll instead of already in a tin.

  • 1 teaspoon curry powder
  • ¼ teaspoon salt
  • 2 cups chopped cauliflower
  • 1 cup frozen peas and carrots
  • ¼ cup all-purpose flour
  • ⅓ cup heavy cream, divided
  • 2 cups low-sodium chicken broth
  • 1 ½ cups shredded cooked chicken or turkey
  • 1 store-bought pie crust (thawed if frozen)
