Couscous Stuffed Pork Chops

Boneless pork chops filled with herbed couscous, baked and served with a pan sauce—elegant yet simple.

  • 1 1/4 cups low-sodium chicken broth
  • 5 tablespoons butter 3/4 cup dry couscous
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced 1/2 cup currants
  • 1/2 cup pine nuts
  • 1/8 teaspoon ground cinnamon salt and freshly ground black pepper
  • 6 boneless pork loin chops, butterflied
  • 1/2 cup orange marmalade
