Chicken & Spinach Salad with Creamy Feta Dressing

The creamy feta dressing steals the show in this protein-rich salad, which makes a perfect lunch or quick and easy dinner. While you can buy feta cheese already crumbled, we like crumbling our own fresh from the block for this salad. We prefer the slightly sharper flavor of sheep’s-milk feta, but cow’s-milk feta works just as well.

  • 1 cup crumbled feta cheese
  • 1/2 cup whole-milk plain yogurt
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon grated garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 1/2 tablespoons chopped fresh dill
  • 1 (5-ounce) package baby spinach
  • 2 cups shredded cooked chicken breast
  • 1 (15-ounce) can no-salt-added chickpeas, rinsed
  • 2 medium persian cucumbers, thinly sliced on an angle
  • 1 cup sliced bell pepper
  • 1/4 cup sliced almonds, toasted (see tip)
