Beef Gyros with Tzatziki Sauce

A gyro is a Greek sandwich made of thin slices of roasted meat, served on pita bread with a cucumber-yogurt sauce. In this recipe, lean ground beef is seasoned with oregano and marjoram, pressed into a loaf pan, baked and thinly sliced to fill the pita.

  • ½ cup shredded, seeded cucumber
  • 1 ½ teaspoons red wine vinegar
  • 1 ½ teaspoons snipped fresh dill
  • 1 clove garlic, minced
  • ¼ teaspoon kosher salt

  • 1 cup chopped onion
  • 2 tablespoons water
  • 1 pound lean ground beef (95% lean)
  • 1 egg
  • ¼ cup dry whole-wheat bread crumbs
  • 4 teaspoons dried oregano, crushed
  • 2 teaspoons dried marjoram, crushed
  • 3 cloves garlic, minced
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 low-carb pita bread rounds
  • 3 medium roma tomatoes, sliced
  • ½ cup thinly sliced cucumber
  • ¼ cup thinly sliced red onion
  • ½ cup crumbled reduced-fat feta cheese (2 ounces)
